Festive Food Guide 2.0: Cabbage Steaks with Tahini Miso Dressing

Side dishes are a delicious way to enhance the star of the meal, but these Cabbage Steaks with Tahini Miso Dressing might end up stealing the show. cabbage steaks:

  • 1 head green cabbage, sliced into 3/4-inch-thick slices
  • 2-4 tablespoons extra virgin olive oil
  • ½ teaspoon ground black pepper
  • fresh parsley, finely chopped, to garnish

tahini miso sauce:

  • 1/4 cup tahini
  • 1 ½ tablespoons melted unsalted butter
  • 1 tablespoon white miso
  • ½ tablespoon pure maple syrup
  • juice of 1 lemon
  • 1 tablespoon tamari (or soy sauce)
  • 1 pinch red pepper flakes, optional
  • water to thin sauce (optional)

instructions:

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

  2. For the tahini miso sauce, combine all ingredients except the water in a medium size bowl and whisk together. Only add the water if you prefer a thinner sauce, adding in small increments based on preference. (Note: this sauce is best as a thick dressing for the final step to drizzle on the cabbage steaks.)

  3. After slicing your cabbage into 1-inch-thick steaks, season with extra virgin olive oil and pepper.

  4. Place the steaks on the baking sheet and roast in the oven for 15 minutes, removing the sheet to add on some of the tahini miso dressing for caramelization.

  5. Add the baking sheet back to the oven for another 15-20 minutes, until charred on the outside and still slightly crispy. Leave to cool for 5 minutes.

  6. Use a spoon to garnish with more sauce and sprinkle on pinches of your finely chopped parsley as a garnish. Enjoy!
