Side dishes are a delicious way to enhance the star of the meal, but these Cabbage Steaks with Tahini Miso Dressing might end up stealing the show. This often-overlooked vegetable stands out by using affordable pantry staples and not compromising on delicious flavour. This is one to wow the crowd at the dinner table!

Preheat the oven to 400°F. Line a baking sheet with parchment paper.
For the tahini miso sauce, combine all ingredients except the water in a medium size bowl and whisk together. Only add the water if you prefer a thinner sauce, adding in small increments based on preference. (Note: this sauce is best as a thick dressing for the final step to drizzle on the cabbage steaks.)
After slicing your cabbage into 1-inch-thick steaks, season with extra virgin olive oil and pepper.
Place the steaks on the baking sheet and roast in the oven for 15 minutes, removing the sheet to add on some of the tahini miso dressing for caramelization.
Add the baking sheet back to the oven for another 15-20 minutes, until charred on the outside and still slightly crispy. Leave to cool for 5 minutes.
Use a spoon to garnish with more sauce and sprinkle on pinches of your finely chopped parsley as a garnish. Enjoy!
