- ½ cup cashew milk
- 1 shot espresso
- ⅓ cup oats
- 2 tablespoons chia seeds
- 1 tablespoon almond butter
- ¼ teaspoon vanilla extract
- 1 teaspoon maple syrup (optional)
- ½ teaspoon pumpkin pie spice (optional)
directions
- In a mason jar, combine the cashew milk, espresso, oats, chia seeds,vanilla extract, almond butter and the optional maple syrup and pumpkin pie spice.
- Cover the jar, tighten the lid, and shake for around 30 seconds until well mixed.
- Leave in the fridge overnight and enjoy with additional toppings of your choice. You could use an extra spoonful of almond butter, berries,cinnamon, or cacao nibs.
Notes
- If you don’t have espresso, you could also use ¼ cup of cold brew coffee, drip coffee, or whatever method you use at home!
- The pumpkin pie spice is a nicetouch for fall that adds a warm flavour for breakfast. Feel free to opt out if you’d prefer.
