Chimichurri Chicken Thighs

Spice up your weeknight dinner game with these zesty Chimichurri Chicken Thighs—bursting with fresh herbs, garlic, and a kick of tangy goodness! They’re quick enough for a casual weeknight but bold and flavour-packed enough to wow your weekend dinner party.

Ingredients

Chimichurri Sauce:

  • 1 cup fresh parsley, firmly packed
  • 2 tablespoons fresh oregano leaves
  • 3  garlic cloves
  • 1 green onion stem
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • ¼  teaspoon sea salt (optional)
  • ⅛  teaspoon freshly ground black pepper
  • ¼  teaspoon red pepper flakes

Chicken Thighs:

  • 8-10 bone-in chicken thighs
  • ½ teaspoon paprika
  • ½ teaspoon italian seasoning
  • ½ teaspoon sea salt (optional)
  • ½ teaspoon freshly cracked black pepper
  • cooking oil such as extra-virgin olive oil or avocado oil

Directions

  1. Preheat the oven to 400°F.
  2. Using a food processor or immersion blender, add all the ingredients for the chimichurri sauce and blend until smooth and fully combined. Set aside.
  3. Using paper towel, dry any moisture from the chicken thighs as best as you can. Sprinkle on salt, pepper, paprika, and Italian seasoning to season the chicken.
  4. Using a stove top, add 1-2 tablespoons of avocado oil to a skillet and heat to medium-high heat. Once at temperature, place half of the chicken thighs into the skillet, skin-side down. Cook until the thighs are browned and crispy, around 4-5 minutes on each side, flipping when needed. Note, the chicken will not be fully cooked through. Once browned, remove the chicken from pan, and repeat with the remaining half of the chicken thighs.
  5. In an oven-safe dish or skillet, add the chicken thighs in skin-side up. Roast in the oven for 20-25 minutes or until cooked all the way through.
  6. Plate the chicken thighs on a bed of basmati rice or roasted vegetables and spoon the chimichurri sauce over the top the chicken. Add fresh chopped herbs on top for garnish, if you wish. Enjoy!

Notes

  • Feel free to use another neutral high-heat cooking oil such as extra-virgin olive oil.
  • If you like things spicy, add ½ teaspoon of cayenne or chili powder when seasoning your chicken thighs.
  • You can easily double this recipe if you’re cooking for a bigger group!
