Ingredients
cabbage steaks:
- 1 head green cabbage, sliced into 3/4-inch-thick slices
- 2-4 tablespoons extra virgin olive oil
- ½ teaspoon ground black pepper
- fresh parsley, finely chopped, to garnish
tahini miso sauce:
- 1/4 cup tahini
- 1 ½ tablespoons melted unsalted butter
- 1 tablespoon white miso
- ½ tablespoon pure maple syrup
- juice of small lemon
- 1 tablespoon tamari (or soy sauce)
- 1 pinch red pepper flakes, optional
- water to thin sauce (optional)
Directions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- For the tahini miso sauce, combine all ingredients except the water in a medium size bowl and whisk together. Only add the water if you prefer a thinner sauce, adding in small increments based on preference. (Note: this sauce is best as a thick dressing for the final step to drizzle on the cabbage steaks.)
- After slicing your cabbage into 1-inch-thick steaks, season with extra virgin olive oil and pepper.
- Place the steaks on the baking sheet and roast in the oven for 15 minutes, removing the sheet to add on some of the tahini miso dressing for caramelization.
- Add the baking sheet back to the oven for another 15-20 minutes, until charred on the outside and still slightly crispy. Leave to cool for 5 minutes.
- Use a spoon to garnish with more sauce and sprinkle on pinches of your finely chopped parsley as a garnish. Enjoy!
