Festive Food Guide 2.0: Peanut Butter Truffles

Sweet treats can be a comfort, and these smooth and delicious Peanut Butter Truffle balls are liver-friendly with the use of dark chocolate and natural sweeteners!  Easy and no need for the oven, these are a fun baking activity to get the whole family involved in. 

Peanut Butter Truffle Balls

Ingredients:

  • 1 cup all-natural creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cup almond flour
  • 1 cup of dark chocolate chips
  • 1 teaspoon coconut oil

Instructions:

  1. In a large mixing bowl, combine the almond flour, peanut butter, maple syrup, and vanilla and mix with a spatula. The texture should be like a soft cookie dough like consistency.

  2. Using your hands, roll the mixture into balls, placing onto a parchment-covered baking sheet and refrigerate for 30 minutes to 1 hour.

  3. In a microwave safe bowl, melt the chocolate chips and coconut oil in 30 second increments, stopping to stir each time.

  4. Once melted, use a fork to lower the balls into the chocolate, covering as much of the ball as you can. Lift the balls back out and place them on a tray. Repeat until all are dipped.

  5. Place balls in the freezer for at least 1 hour before eating and store in the freezer. Enjoy!

Notes:

  • You can also use a toothpick to dip the balls into chocolate if that feels easier!
  • Feel free to use an alternative nut butter if there are any peanut allergies, such as almond butter, sunflower seed butter, or cashew butter. Keep in mind that the almond flour will absorb more/less flour depending on the type, so you might have to alter slightly!
